Preheat oven to 200°C. Wash and cube the potatoes, then place them in an 8x8 glass baking dish.

Drizzle 1 tablespoon of olive oil over the potatoes and sprinkle with thyme, oregano, salt, and black pepper. Toss to coat evenly.

Place feta in the center of the dish, pressing one side into potato seasonings before flipping. Add garlic head and half the lemon wedges. Drizzle remaining olive oil over everything.

Roast for 45-55 minutes at 200°C until potatoes are golden and crispy. Remove garlic after 35 minutes if it browns excessively.

Cool garlic and squeeze softened cloves from skins. Mash into a paste and mix with roasted potatoes, feta, lemon juice, and basil.

Drizzle honey and garnish with additional basil before serving.
