Flavorful Mexican Rice (Printer-Friendly Format)

Aromatic long-grain rice sautéed with vegetables and simmered in tomato sauce with traditional Mexican spices.

# Ingredients You'll Need:

01 - 1 tablespoon olive oil
02 - 1 small onion, diced
03 - 2 garlic cloves, minced
04 - ½ red bell pepper, diced
05 - 1 small jalapeno, seeded and finely diced
06 - 1 cup long-grain white rice
07 - ½ teaspoon cumin
08 - kosher salt, to taste
09 - 8 ounces tomato sauce
10 - 1 cup vegetable or chicken broth
11 - optional: finely chopped cilantro for garnish

# Step-by-Step Instructions:

01 - Thoroughly wash and drain the rice with a fine mesh sieve.
02 - Heat the oil in a large saucepan over medium-high heat. Add the onions, garlic, bell pepper, and jalapeno and saute for 1 to 2 minutes, or until the onions become translucent.
03 - Add the rice and saute until it's lightly toasted and golden brown, about 2 minutes.
04 - Add in the cumin, salt, tomato sauce and chicken broth, then stir everything together.
05 - Bring the mixture to a boil, cover, reduce the heat to low and simmer until rice is cooked all the way through, about 15 minutes.
06 - Remove the rice from the heat and use a fork to fluff it up. Garnish with chopped cilantro and serve immediately.

# Additional Information:

01 - If you'd like the dish less spicy, you can omit the jalapeno or replace it with 1/2 teaspoon of chili powder.
